Spinach Beet Salad for Two

Ingredients

• 1 (8 1/4 ounce) cansliced beets
• drained
• 14 cup commercial Italian dressing
• 1 stalk celery
• chopped
• 2 green onions
• chopped
• 3 spinach leaves
• shredded
• fresh spinach leaves
• 1 egg yolk
• hard-cooked and sieved

Instructions

1. Combine beets and dressing; marinate at least 2 hours.
2. Drain.
3. Add next 3 ingredients, and toss gently.
4. Arrange beet mixture on spinach leaves; sprinkle with egg yolk.
5. Yield: 2 servings.
