Ingredients
- 1 onion
- peeled and chopped
- 2 garlic cloves
- minced
- 14 ounces spinach
- chopped
- cooking spray
- 12 teaspoon ground nutmeg (optional)
- 12 ounces ricotta cheese
- 12 cup chicken broth
- 1 pinch salt & freshly ground black pepper
Instructions
- Spary a large non stick saucepan with cooking spray and add the onion, garlic and spinach.
- Stir fry for 8-10 minutes.
- Add the nutmeg (if using) ricotta and broth.
- Cook for a further 4-5 minutes, stirring often.
- Remove from the heat and season well.
- Serve mixed with cooked pasta of your choice.
