Ingredients

  • 4 ounces
  • weight Pepper Jack Cheese
  • Shredded
  • 4 ounces
  • weight White Cheddar Cheese
  • Shredded
  • 4 ounces
  • weight Cream Cheese
  • Softened
  • 1/4 cups Cilantro
  • 1/4 cups Carrot
  • Shredded
  • 1 teaspoon Lime Zest
  • 1/4 cups Red Onion Or Shallot
  • Minced
  • 3 leaves Mint
  • 1 clove Garlic
  • 1/2 cups Peanuts
  • Roughly Chopped For Coating

Instructions

  1. In a food processor, add in cheeses and pulse to combine.
  2. Add in remaining ingredients, except peanuts, and pulse to combine until nearly smooth.
  3. Pour cheese onto a double layer of plastic wrap.
  4. Gather all the ends of the twist them together to tighten the cheese mixture into a ball.
  5. Place in fridge for 20-30 minutes to begin to set.
  6. Once it begins to set, unwrap from plastic and roll into chopped peanuts.
  7. Serve immediately or wrap into a new layer of plastic wrap until ready to serve.
  8. Serve with lime sprtized tortilla chips or crackers and additional lime.
