Ingredients
- 3 whole Sweet Potatoes
- 1/4 cups Extra Virgin Olive Oil
- 1/2 teaspoons Ground Black Pepper
- 1/2 teaspoons Red Pepper
- 1/2 teaspoons Garlic Salt
Instructions
- Preheat oven to 450 degrees F.
- In a medium saucepan, heat a pot of water to a simmer.
- Place whole sweet potatoes into simmering water for 7-8 minutes to par boil them.
- Remove potatoes from water, pat dry with paper towel.
- Slice them into rounds 1/4-1/3 inch thick.
- Set aside into a medium bowl.
- Pour olive oil over the top of the potatoes, and add the spices.
- With a large spoon, mix together gently until all sweet potatoes are thoroughly covered.
- On a non-stick rimmed cookie sheet, lay out rounds in a single layer.
- Place in oven for 8 minutes until potatoes are soft and start to brown.
- Remove pan from oven, flip over each round over and return to oven for an additional 10 minutes.
- When finished, scoop potatoes onto a plate lined with paper towels to drain.
- Serve immediately.
