Ingredients
- 2 tablespoons olive oil
- 4 garlic cloves
- 4 long red chilies
- chopped
- 1 12 kg ham hocks
- skin removed
- 500 g dried black eye beans
- soaked
- 1 (400 g) can tomatoes
- chopped
- 4 liters water
- salt and pepper
- 1 cup coriander
- chopped
Instructions
- Heat oil in large pot on medium heat.
- Add garlic and chill, cook 4 minutes till softened.
- Add ham hock, beans, tomatoes and water.
- Cook 60 minutes or till beans are tender.
- Remove ham hock, shred meat off bone, return meat to pan.
- Add salt and pepper and coriander.
