Spicy Chicken in Cabbage Leaves

Ingredients

  • 650 g chicken (minced or ground)
  • 14 cup curry paste (massaman)
  • 400 g vegetables (stir fry packet fresh)
  • 2 tablespoons coriander (chopped plus leaves to garnish)
  • 8 cabbage leaves (red small hard core removed and trimmed with scissors to serve)

Instructions

  1. Heat a wok or large fryingpan over high heat and add mince, cook, stirring with a wooden spoon to break up lumps for 5 minutes or until browned.
  2. Add the massaman curry paste and stir fry for 1-2 minutes till fragrant.
  3. Add vegetables to pan and stir fry for 2-3 minutes or until tender and remove from heat and stir in coriander.
  4. Fill cabbage leaves with chicken mixture and garnish with extra coriander leaves and as an extra squeeze a little lime juice over the meat mix,.
