Ingredients
- 3 teaspoons Chili Powder
- 1 teaspoon Paprika
- 1 teaspoon Coriander
- 1 teaspoon Cumin
- 1 teaspoon Garlic Powder
- Salt And Pepper
- to taste
- 2 cups Couscous
- Cooked
- 3 whole Eggs
- 1 cup Mozzarella
- Shredded
- 1 cup Cheddar Cheese
- Shredded
- 1 Tablespoon Unsalted Butter
- Queso Fresco (garnish)
- Cilantro
- Garnish
Instructions
- In a large bowl, combine chili powder, paprika, coriander, cumin, garlic powder, salt, pepper, cooked couscous, eggs, mozzarella, and cheddar.
- Preheat a large nonstick skillet to medium-high heat.
- Melt butter and add couscous mixture to skillet, spreading into an even layer.
- Cook until golden brown on bottom, about 5 minutes.
- Remove from heat and place skillet under a broiler for about 5 minutes or until golden brown.
- Remove skillet from oven and invert a plate over skillet, flip and serve.
- Garnish with queso fresco and cilantro.
