Ingredients
- 2 teaspoons olive oil
- 2 garlic cloves
- minced
- kidney bean (drained and rinsed)
- 14 cup vegetable stock
- 14 cup cilantro
- chopped
- 12 teaspoon cumin
- 18 teaspoon chili pepper
- 12 ripe tomatoes
- chopped
Instructions
- In a small pot heat oil over med-hi heat.
- Add garlic and saute for 2 minutes.
- Add remaining ingredients and simmer over med-lo heat for 15 minutes, stirring regularly.
- Give it a whir with an immersion blender to get a good consistency and serve.
