Speed-Toss Spinach Salad With Carrots & Chickpeas for One
Ingredients
- 1 12 cups fresh spinach leaves
- 13 cup carrot
- shredded
- 12 cucumber
- cut into rounds
- 14 cup chickpeas
- 14 cup crostini crouton
- 2 tablespoons balsamic vinaigrette (approx)
Instructions
- I use pre-shredded carrot, but shred some if you don't have any.
- Cut the cucumber into rounds, about half or a little less than half should do it.
- Toss all the ingredients together in a bowl and top with the dressing.
