Southwestern Corn Bread Chicken

Ingredients

• 1 Tbsp. canola oil
• 1 lb. ground chicken
• 1/2 cup chopped onion (1 small onion) King Soopers 1 lb For $0.99 thru 02/09", "1 red bell pepper, chopped", "1/2 cup canned corn", "1/3 cup black beans, drained and rinsed", "1 Roma tomato, chopped King Soopers 1 lb For $0.99 thru 02/09
• 1-1/2 cups water
• 1/4 cup butter
• 1 pkg. (6 oz.) STOVE TOP Cornbread Stuffing Mix

Instructions

1. In a large skillet, heat canola oil over medium heat.
2. Add chicken and onion and cook until onion is translucent.
3. Stir with a large spatula breaking up the ground chicken.
4. Add bell pepper, corn, black beans and tomato and stir, cooking for 8 minutes.
5. Remove from heat and set aside.
6. In a separate large saucepan, boil 1 1/2 cups water and butter.
7. Stir in stuffing mix and cover.
8. Remove from heat.
9. Let stand 5 minutes and add to the chicken mixture.
10. Stir to combine ingredients and serve.
