Soupe a La Tomate (France)

Ingredients

  • 1 tablespoon unsalted butter
  • 1 small onion
  • diced
  • 1 lb fresh tomato
  • seeded
  • diced small
  • 2 tablespoons all-purpose flour
  • 1 liter water
  • 18 teaspoon salt
  • to taste
  • 14 teaspoon basil
  • 14 teaspoon thyme
  • 1 tablespoon brown sugar
  • packed

Instructions

  1. In a large sauce pan, melt butter & add onion.
  2. Add tomatoes & stir for 30 seconds, then add flour & stir another 1/2 minute.
  3. Add water slowly while continuing to stir.
  4. Add salt, pepper, basil, thyme & brown sugar, then reduce heat & simmer about 50 minutes, stirring often.
  5. Let tomato mixture cool slightly, then pour it into a blender & liquify for just a few seconds before serving.
