Sophie's baked parmesan polenta avocado

Ingredients

  • 2 avocados
  • skinned and cut into 8 slices
  • 5 tbsp Greek yogurt or similar
  • 2 tbsp grated parmesan
  • 7 tbsp Polenta/corn meal
  • 3 tsp garlic powder

Instructions

  1. Preheat the oven to 180C.
  2. Mix your dry ingredients together.
  3. Dip a slice of avocado in the yogurt.
  4. Make sure it is a thin layer.
  5. Dip your yogurt coated avocado slice into your dry mix.
  6. Place on a baking tray sprayed with baking spray.
  7. Repeat.
  8. Bake for 30 minutes.
  9. Serve and enjoy!
  10. I had mine with sour cream, but I think a tomato sauce would work best as a dipping sauce.
