smoked sausage w/ spicy rice

Ingredients

  • 4 cup brown rice (i used quick rice)
  • 1 can diced tomatoes & green chiles (i used Red Gold)
  • 2 lb smoked sausage link

Instructions

  1. cook your rice as directed on the box.
  2. slice up your smoked sausage
  3. cook your smoked sausages & your can of diced tomatoes w/ green chiles (do not drain) in a seperate large pan on the stove on medium/low heat & let simmer for around 5 minutes.
  4. when your rice is cooked, drain it & add to your sausage mixture...mix well
  5. simmer for another 5 to 10 minutes, then remove from heat & allow it to sit for another 5 to 10 minutes for rice to absorb the rest of the juices in the pan.
