Ingredients
- 4 oz mixed salad greens
- 4 small peaches
- sliced
- 2 handfuls of blueberries
- 2 handfuls of walnuts
- 2 handfuls of fresh mint leaves
- 1/2 cup cubed smoked cheddar cheese (I have changed it up by using sharp cheddar cheese as well as other cheeses)
- 2 tsp balsamic vinegar
- 1 pinch of salt
- 1 pinch of pepper
- 2 tbsp extra virgin olive oil
Instructions
- Assemble salad ingredients in a bowl.
- Mix dressing ingredients and drizzle over salad.
- *To make this vegetarian recipe omnivore, add some prosciutto or Serrano ham.
