Smashed Potatoes for Two
Ingredients
- 2 small baking potatoes
- 2 tablespoons butter
- 14 cup light sour cream
- salt and pepper
Instructions
- Wash potatoes.
- Prick potatoes for baking.
- Bake in microwave until soft and cooked through (the time and power will depend on your microwave).
- Place cooked potatoes in mixing bowl, add all other ingredients, and mash with potato masher until at desired consistency.
