Smashed Chickpea and Avocado Sandwich

Ingredients

  • 1 can (15 Oz. Size) Chickpeas Drained
  • Rinsed
  • And Patted Dry
  • 2 Avocados
  • 1 Tablespoon Chopped Cilantro
  • 1 Lime
  • Juiced
  • 1/2 teaspoons Garlic Powder
  • Salt And Pepper
  • to taste
  • 4 slices Bread
  • Tomato Slices
  • To Serve (optional)

Instructions

  1. In a medium bowl, mash chickpeas with fork or potato masher.
  2. Slice avocados in half, remove pits, and scoop out middle into the bowl with the chickpeas.
  3. Add cilantro, lime juice, garlic powder, salt, and pepper.
  4. Mix together until combined.
  5. Spread mixture onto slices of bread.
  6. Top with tomato slices, if desired, and another slice of bread.
  7. Serve immediately.
