Slow Cooker Chicken Corn Chili

Ingredients

  • 4 whole Boneless
  • Skinless Chicken Breasts
  • 24 ounces
  • fluid Fresh Salsa
  • 2 cloves Garlic
  • Minced
  • 1 Tablespoon Chili Powder
  • 2 teaspoons Cumin
  • 2 cans (15 Oz. Size) Black Beans
  • Drained And Rinsed
  • 2 cans (15 Oz. Size) Kidney Beans
  • Drained And Rinsed
  • 10 ounces
  • weight Frozen Sweet Corn
  • 4 ounces
  • weight Shredded Cheddar (optional)
  • 2 whole Avocados
  • Cubed (optional)
  • 6 Tablespoons Sour Cream (optional)

Instructions

  1. Put chicken (it can still be frozen which makes this recipe even easier!
  2. ), salsa, garlic, chili powder and cumin in the crock pot.
  3. Stir and cover.
  4. Cook on low for 4 hours.
  5. Remove chicken and shred using two forks.
  6. It pretty much falls apart at this point, and doesnt take much effort.
  7. Add the beans and corn, give it a quick stir, and cook for another 2 hours on low.
  8. Top each serving with cheese, sour cream and avocado, if using.
  9. Serve with tortilla chips or fresh cornbread.
