Ingredients
- 2 ripe avocados
- sliced into 1/2 inch slices
- 2 oranges
- segmented reserving 1 tablespoon juice
- 1 pink grapefruit
- segmented
- 3 ounces baby rocket
- 1 teaspoon finely grated orange zest
- 1 tablespoon orange juice
- 2 12 ounces extra virgin olive oil
- 1 tablespoon red wine vinegar
- 12 teaspoon Dijon mustard
- 1 teaspoon sugar
- salt and pepper
- 1 tablespoon chopped of fresh mint
Instructions
- Place the avocado and citrus fruit in a serving bowl or platter and toss with the rocket leaves.
- In a separate bowl, place the orange zest and juice, oil, vinegar, mustard and sugar.
- Season with salt and pepper and whisk together.
- Pour over the salad, covering all the leaves and fruit.
- Sprinkle with the chopped mint.
