Simple & Fluffy Chicken Tsukune Patties for Cherry Blossom Viewing

Ingredients

  • 200 grams Minced chicken
  • 1/4 block Tofu
  • 1/4 Onion
  • 1/4 Carrot
  • 1/5 Green onions
  • 1 tbsp Katakuriko
  • 1 Egg
  • 1 tbsp Sake
  • 2 sprinkles Salt and pepper
  • 2 tsp Grated ginger
  • 1 tbsp Sugar
  • 3 tbsp Soy sauce
  • 1 tbsp Sake
  • 1 tbsp Mirin

Instructions

  1. First, drain the tofu.
  2. If you have time please leave it to drain for about 1 hour.
  3. If not, it's fine to give it just a quick drain.
  4. Finely chop the carrot, onion and spring onion.
  5. Add every ingredient that isn't for the sauce or seasoning (sake, ginger, salt & pepper) into a bowl and mix well.
  6. Add the sake, ginger, salt and pepper and mix until the mixture starts to feel a little sticky.
  7. Grease a frying pan with some oil, shape the patties into the size you want and cook one side over medium heat for 5 minutes.
  8. Flip the patties over and cook for a further 5 minutes.
  9. Once they have browned, they're ready.
  10. Mix together the sauce ingredients and add to the frying pan in one go.
  11. Mix with the patties and you're done
