Ingredients
- 2 c. cooked
- peeled & deveined shrimp
- 1 1/2 c. rice
- cooked
- 1/2 c. celery
- sliced
- 1/2 c. unpeeled cucumbers
- minced
- 1/4 c. chives
- minced
- 1/3 c. mayonnaise
- 1/4 c. lowfat sour cream
- 1 tbsp. chili sauce
- 1/4 teaspoon onion salt
- 1/8 teaspoon pepper
- 1 1/2 teaspoon tarragon vinegar
- Salad greens
- Horseradish (optional)
- Lemon wedges
Instructions
- Toss shrimp, rice, celery, cucumbers and chives together.
- Blend ingredients for dressing.
- Pour over shrimp mix and toss thoroughly.
- Chill.
- Serve on salad greens.
- Top with a little horseradish, if you like and garnish with lemon wedges.
- 6 servings.
