Ingredients
- 3/4 pound shrimp
- tuna
- or possibly chicken (2 cans 6 1/2
- 7 ounce. each of chicken or possibly tuna)
- 3 tbsp. Crisco
- 1/3 c. flour
- 1/2 c. lowfat milk
- 2 tbsp. finely minced onion
- 1 tbsp. snipped parsley
- 2 teaspoon lemon juice
- 1/4 teaspoon salt
- Dash pepper
- Dash paprika
- 3/4 c. fine dry bread crumbs
- 1 egg
- beaten
- 2 tbsp. water
- 18 ounce. pkg. frzn peas with cream sauce
- optional
- Crisco for deep frying
Instructions
- Chop meat finely (about 2 c.).
- Heat 3 tbsp.
- Crisco.
- Blend in flour.
- Add in lowfat milk, cook and stir overy very medium heat till ver thick and smooth; remove from heat.
- Add in onion, parsley, lemon juice and seasonings; stir in shrimp, tuna or possibly chicken.
- Preheat Crisco for deep frying to 350 degrees shape meat mix into 8 cones, about 1/4 c. for each.
- Roll in crumbs, combine egg with water.
- Dip cones in egg mix; roll in crumbs again.
- Deep fry a few croquettes at a time in Crisco till brown and warm about 3 min.
- Turn if necessary for even cooking.
- Drain on paper towel.
- Keep warm.
- Prepare peas according to package directions.
- Spoon creamed peas over croquettes.
- Makes 4 servings.
