Shrimp Cocktail with Guacamole

Ingredients

  • 1 -ounce olive oil
  • 8 jumbo shrimp (10 to 20 count per pound)
  • Salt and freshly ground black pepper
  • 1 avocado
  • seeded and peeled
  • 1/2 tablespoon lime juice
  • 1 small clove garlic
  • crushed
  • 1 1/2 teaspoons finely chopped onion
  • 1 sprig fresh cilantro
  • leaves chopped
  • Splash hot sauce (recommended: Tabasco)

Instructions

  1. In a saute pan, heat olive oil over moderate high heat.
  2. Season shrimp with salt and pepper and cook for 1 or 2 minutes on each side or until pink.
  3. Using a fork, coarsely mash avocado with lime and garlic.
  4. Stir in onion, cilantro and hot sauce to blend.
  5. Season with salt, to taste.
  6. Place the guacamole in a dipping bowl with the shrimp arranged around.
