Shrimp and Baby Spinach over Fettuccine

Ingredients

  • 1 lb fettuccine
  • 4 tbsp olive oil
  • extra virgin
  • 6 oz baby spinach
  • 6 clove garlic (minced)
  • 1/2 tbsp Italian seasoning
  • 1 tsp salt
  • 2 roma tomatoes (diced)
  • 1 lb shrimp
  • medium (peeled and de-veined)
  • 1/4 cup parmesan cheese
  • shredded

Instructions

  1. Cook fettuccine according to package directions.
  2. Meanwhile, in a large skillet, saute spinach in oil for 2 minutes or until spinach begins to wilt.
  3. Add garlic; cook 1 minute longer.
  4. Add the shrimp, tomatoes, Italian seasoning and salt; saute for 2-3 minutes or until shrimp turn pink.
  5. Drain fettuccine and add to skillet; toss to coat.
  6. Sprinkle with cheese.
