Shrimp al Ajillo (Shrimp and Garlic)

Ingredients

  • 1 cup olive oil
  • 3 tablespoons crushed and chopped garlic
  • 2 pounds medium shrimp
  • peeled and deveined
  • 1 teaspoon hot red-pepper flakes
  • 1 teaspoon Tabasco or other hot sauce
  • 1 teaspoon mild paprika
  • Salt to taste

Instructions

  1. Place a large pot over low heat.
  2. When the pot is hot, add the olive oil and garlic.
  3. Cook until the garlic has softened in the oil, about 2 minutes.
  4. Raise the heat to high and add the shrimp.
  5. Saute for 2 minutes.
  6. Sprinkle in the pepper flakes, Tabasco and paprika.
  7. Season with salt to taste.
  8. Cover,reduce heat to low and cook until the shrimp is opaque and firm, about 5 more minutes.
  9. Taste and adjust seasoning,adding more Tabasco or red-pepper flakes if you like more heat.
  10. Serve with fried potatoes or rice.
