Ingredients
- 1 pound raw shrimp
- deveined
- 1/2 c. onion
- minced
- 1 sm. clove garlic
- chopped
- 1/2 c. celery
- minced
- 1/2 c. parsley
- minced
- 1/3 c. bell (sweet) pepper
- minced
- 3 tbsp. extra virgin olive oil
- 2 c. water
- 2 c. tomatoes
- 1 c. tomato puree (sauce)
- 1/2 teaspoon Lea & Perrins Worcestershire
- 1/2 teaspoon Louisiana Warm Sauce (cayenne)
- 1 teaspoon salt
- 3 c. cooked rice
Instructions
- Saute/fry onion, celery, parsley and bell pepper till tender.
- Add in water, tomatoes, tomato puree and garlic.
- Simmer 5 min.
- Add in Lea & Perrins, Louisiana Warm Sauce and salt.
- Cook mix for 30 min.
- Add in shrimp and cook for 30 more min, or possibly till shrimp are done and mix is thick.
- Serve over rice.
- Yield: 4 portions.
