Ingredients
- 1 pound Ground Beef
- 1 package (1 Oz. Packet) Taco Seasoning (or You Can Make Your Own)
- 15 ounces
- weight Canned Whole Kernel Corn
- Drained
- 10 ounces
- weight Canned Tomatoes With Green Chiles (Rotel)
- 1 cup Chopped Green Or Red Bell Pepper
- 3 cups French Fried Onions (from A 6 Oz. Can)
- Divided
- 8- 1/2 ounces
- weight Corn Muffin Mix (I Used Jiffy)
- 1/2 cups Shredded Cheddar Cheese
Instructions
- Preheat oven to 400 degrees.
- Brown beef in large skillet; drain.
- Stir in taco seasoning, corn, Rotel, bell peppers, and half of the fried onions.
- Pour mixture into a 2-quart oblong baking dish.
- Prepare corn muffin mix according to package directions.
- Spoon batter on top of the beef mixture.
- Bake, uncovered, for 25 minutes or until corn bread is golden.
- Top with cheese and remaining fried onions.
- Bake uncovered for 1 minute or until onions are golden.
