Sesame Mango Noodle Salad with Guacamole

Ingredients

  • 2 Tablespoons Sesame Oil
  • 1- 1/2 Tablespoon Tamari
  • Or A Little Less Soya Sauce
  • 1 teaspoon Minced Ginger
  • 1/2 Tablespoons Rice Vinegar
  • 2 cloves Garlic
  • Minced
  • 1/2 teaspoons Agave Nectar
  • Or Sweetener
  • Pepper
  • 4 bunches Cooked Noodles
  • Like Spaghetti
  • Cooked According To Package Instruction
  • 2 whole Mangoes
  • Peeled
  • Pitted And Chopped
  • 1/4 cups Chopped Green Onion
  • 2 cups Chopped Lettuce Leaves
  • Romaine Works Well
  • Optional Garnishes: Guacamole
  • Chopped Fresh Cilantro
  • Chopped Peanuts

Instructions

  1. Whisk all of the dressing ingredients together in a large bowl.
  2. Add cooked noodles, mango, and green onion, tossing to coat.
  3. Set aside in the fridge.
  4. To assemble the salad, pile some of the romaine lettuce in the bottom of the serving bowl, followed by the noodle mixture on top, and top with a nice big dollop of guacamole.
  5. Garnish with cilantro, or peanuts (if using) and enjoy!
