Whisk all of the dressing ingredients together in a large bowl.
Add cooked noodles, mango, and green onion, tossing to coat.
Set aside in the fridge.
To assemble the salad, pile some of the romaine lettuce in the bottom of the serving bowl, followed by the noodle mixture on top, and top with a nice big dollop of guacamole.
Garnish with cilantro, or peanuts (if using) and enjoy!
