Ingredients
- 12 cup diced radish
- 1 cup diced cucumber
- 1 cup diced tomato
- 1 bunch scallion
- sliced (Use both green and white parts of scallion
- reserve some green for garnish)
- 2 tablespoons of fresh mint
- rough chop. (Fresh Parsley or Cilantro or Dill can be substituted for a change in flavor)
- 2 lemons
- juice of
- 14 cup olive oil
- 12 cup crumbled feta cheese
Instructions
- Toss together all ingredients except for Feta Cheese.
- Let stand for 1/2 hour.
- Put salad in decorative bowl, or spoon onto individual plates.
- Sprinkle crumbled feta on top and serve.
- Salad only gets better as it sits; it is great the day after.
