Ingredients
- 2 cups fresh strawberries
- cut into 1/4-inch dice Safeway 1 lb For $3.99 thru 02/09
- 1 cup fresh pineapple
- cut into 1/4-inch dice
- 1/2 cup fresh cilantro
- chopped
- 1/3 cup red onions
- finely chopped
- 1/4 cup jalapeno peppers
- seeded
- chopped
- 1/2 cup KRAFT Zesty Italian Dressing
- 4 tsp. lime juice
- 1/2 cup GREY POUPON Classic Dijon Mustard
- 2-1/2 Tbsp. Caribbean jerk seasoning
- - fresh tuna fillets
- 1/2 inch thick
- 80 slices French baguettes
- cut into 1/2-inch-thick slices
- toasted
- 1-1/4 cups KRAFT MAYO Real Mayonnaise
- 40 each baby spinach leaves
Instructions
- Combine strawberries, pineapple, cilantro, onions and peppers in large bowl.
- Add dressing and lime juice; toss to coat.
- Refrigerate until ready to serve.
- Mix mustard and seasoning; brush onto both sides of each fish fillet.
- Grill on medium-high heat 2 to 3 min.
- on each side or until fish flakes easily with fork, or to desired doneness.
- Remove from grill.
- Cut into 80 pieces (or cut into 10 pieces for trial recipe), with each piece measuring about 1-1/4x1 inches.
- Cover to keep warm.
- For each serving: Spread 3/4 tsp.
- mayonnaise onto each of 2 toast slices; cover each with 1 spinach leaf, 1 fish piece and about 2 tsp.
- of the strawberry mixture.
