Ingredients
- 1 12 cups red lentils
- 1 lb hot Italian turkey sausage
- 14 ounces sweet corn
- drained
- 1 medium onion
- chopped
- 4 celery ribs
- chopped
- 5 cups water
- 14 teaspoon black pepper
- freshly ground
- 14 cup pearl barley
Instructions
- Brown sausage over medium heat with onions and celery breaking them into small pieces.
- Pour in the water, add pepper, corn and lentils.
- Stir all the ingredients, bring to a boil over medium heat, stirring occasionally.
- Reduce heat, cover and simmer for 1 hour, stirring from time to time to prevent the lentils from sticking or burning.
- Add barley after about a half hour, then remove lid and simmer the other half hour.
