Saucy Tilapia with Tomatoes and Capers

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion
  • chopped
  • 2 garlic cloves
  • chopped
  • One 14 1/2-ounce can diced tomatoes
  • 3 tablespoons capers
  • rinsed and drained
  • Salt and freshly ground black pepper to taste
  • Four 6-ounce tilapia fillets
  • 2 tablespoons chopped fresh basil
  • for garnish (optional)

Instructions

  1. Warm the olive oil in a large skillet over medium heat.
  2. Add the onion and cook, stirring occasionally, for 3 to 5 minutes, or until softened.
  3. Add the garlic, cook for 1 minute, then add the tomatoes, capers, salt, and pepper.
  4. Reduce the heat to medium-low and cook for 5 minutes.
  5. Season the tilapia with salt and pepper.
  6. Raise the heat under the sauce to medium and simmer.
  7. Nestle the fillets in the sauce, cover, and cook for 3 minutes.
  8. Using cooking tongs or a fork, turn the fish over and continue cooking, uncovered, for 3 to 5 minutes, or until a fork goes through the thickest part of the fish with no resistance.
  9. Garnish with the basil, if desired.
