Ingredients
- 1 lb turkey strips (thin and about an inch long) or 1 lb chicken strips (thin and about an inch long)
- 2 (8 ounce) cans corn
- 2 (8 ounce) stewed tomatoes
- 2 (8 ounce) black beans
- 1 cup fat free sour cream
- 2 cups instant brown rice
- 1 teaspoon hot sauce
- 1 tablespoon olive oil
- 4 ounces water
- salt and pepper
Instructions
- Combine corn, tomatoes, beans (do not drain) and 1/2 can of water in pot and bring to boil.
- Add rice, cook until tender.
- Remove from heat.
- Saute turkey/chicken strips in oil and hot sauce (to taste).
- Mix meat with corn, tomatoes, beans, and rice.
- Add sour cream.
- Salt and pepper to taste.
