Ingredients
- 2 Tbsp. oil
- 2 garlic cloves
- minced
- 1 yellow pepper
- cut into chunks Target 1 pkg For $2.99 thru 02/06
- 2 celery stalks
- sliced
- 1 1/2 cups water
- 1 1/2 cups snow peas
- 20 medium cooked shrimp
- 2 Tbsp. lemon juice Safeway 4 ct For $5.00 thru 02/09
- 2 Tbsp. Dijon mustard
- 1 tsp. each dried tarragon
- salt and black pepper
- 1 1/2 cups Minute Rice Brand Rice
- 2 green onions
- sliced
Instructions
- IN large fry pan, heat oil over medium-high heat.
- Saute garlic, yellow pepper and celery for 2 to 3 minutes.
- ADD remaining ingredients except rice and green onions.
- BRING to a boil.
- Stir in rice.
- Cover; remove from heat and let stand 5 minutes.
- Sprinkle with green onions before serving.
