Ingredients

  • 2 Tbsp. oil
  • 2 garlic cloves
  • minced
  • 1 yellow pepper

  • 2 celery stalks
  • sliced
  • 1 1/2 cups water
  • 1 1/2 cups snow peas
  • 20 medium cooked shrimp
  • 2 Tbsp. lemon juice Safeway 4 ct For $5.00 thru 02/09
  • 2 Tbsp. Dijon mustard
  • 1 tsp. each dried tarragon
  • salt and black pepper
  • 1 1/2 cups Minute Rice Brand Rice
  • 2 green onions
  • sliced

Instructions

  1. IN large fry pan, heat oil over medium-high heat.
  2. Saute garlic, yellow pepper and celery for 2 to 3 minutes.
  3. ADD remaining ingredients except rice and green onions.
  4. BRING to a boil.
  5. Stir in rice.
  6. Cover; remove from heat and let stand 5 minutes.
  7. Sprinkle with green onions before serving.
