Ingredients
- 1 pound salmon fillets
- skinned
- 2 tablespoons olive oil
- 2 medium onions
- chopped
- 2 cloves garlic
- minced
- 4 tablespoons chopped Greek olives
- or other olives packed in brine
- 2 teaspoons dried oregano
- 1/2 pound linguine
- Freshly ground black pepper to taste
Instructions
- Broil fillets 5 to 7 minutes, depending on thickness.
- In hot oil, saute onion and garlic until onion is soft.
- Add olives and oregano and stir; cook 2 minutes over low heat.
- Meanwhile, cook linguine in 4 quarts boiling water until it is al dente.
- Drain.
- Cut salmon into small pieces and add to onion.
- Reheat and serve mixed with pasta.
- Sprinkle with freshly ground black pepper.
