Roasted Tomato Whole Wheat Grilled Cheese

Ingredients

  • 5 whole Tomatoes Of Your Choosing
  • Cut Into Thick Slices (I Like Heirloom)
  • 1 Tablespoon Olive Oil
  • 8 slices Whole Wheat Seedy Bread
  • 1 cup Shredded Fresh Mozzarella Cheese
  • 1 cup Fresh Basil Leaves
  • 1 cup Parmesan Cheese
  • Shredded

Instructions

  1. Preheat oven to 450 F. On a baking sheet, lay out the tomato slices and drizzle with olive oil.
  2. Roast them for 35-40 minutes until tomatoes are looking soft and shriveled.
  3. Once done remove the tray from oven.
  4. Heat a panini press according to manufacturers instructions or a cast iron skillet over medium high heat, and spray with cooking spray.
  5. Assemble sandwiches.
  6. Lay down 1 slice of bread, sprinkle with mozzarella cheese, lay down a few tomato slices, fresh basil, and top with Parmesan cheese.
  7. Place second piece of bread down on the top and grill until until cheese is melty and crust looks crispy.
  8. This will take 3-4 minutes in a panini press; or 3-4 minutes per side in the skillet.
  9. Continue with remaining sandwiches.
  10. Enjoy.
