Ingredients
- 4 boneless skinless chicken breasts
- 1 -2 tablespoon minced onion
- salt and pepper
- 2 lbs red potatoes
- quartered
- 4 carrot sticks
- peeled and cut into chunks
- 14 cup maple syrup
- 14 cup Dijon mustard
Instructions
- Preheat oven to 400 degrees.
- In a large roasting pan or casserole dish place chicken in middle and season with salt, pepper and onions.
- Add potatoes and carrots around chicken.
- In small bowl whisk together maple syrup and dijon mustard.
- Pour mixture over the top of the chicken and vegetables.
- Roast for 30 to 40 minutes or until chicken is cooked through and potatoes are soft.
