  • 1 qt. GREY POUPON Classic Dijon Mustard
  • 1 qt. poblano chiles
  • roasted
  • peeled
  • seeded and minced
  • 2-1/2 cups honey
  • 4-1/2 tsp. chipotle chile pepper powder
  • Fritters
  • 1 qt. flour
  • 1 qt. corn muffin mix
  • 3/4 cup sugar
  • 3 Tbsp. kosher salt
  • 6 each eggs
  • 3 cups milk
  • 3/4 cup butter
  • melted
  • 1 Tbsp. lobster base Walmart Supercenter 1 ea For $12.96 thru 02/14
  • 1-1/2 qt. corn
  • roasted
  • - cooked lobster meat
  • chopped Walmart Supercenter 1 ea For $12.96 thru 02/14
  • 1-1/2 cups green onions
  • finely chopped

Instructions

  1. Poblano-Mustard Dipping Sauce: Combine ingredients in bowl.
  2. Pour half of the sauce into blender; blend until smooth.
  3. Return to remaining sauce in bowl; mix well.
  4. Lobster Fritters: Mix flour, dry muffin mix, sugar and salt; set aside.
  5. Beat eggs, milk, butter and lobster base with wire whisk until well blended.
  6. Add to flour mixture; mix well.
  7. Stir in remaining ingredients.
  8. For each serving: Using #50 scoop to portion out batter for each fritter, fry four fritters at a time in 330 degrees F-deep fryer 2 to 3 min.
  9. or until golden brown.
  10. Drain on paper towels.
  11. Serve with 1/4 cup of the Poblano-Mustard Dipping Sauce.
