Ingredients
- 3 piece Chicken Drumstick & Thighs.
- 2 stick Celery.
- 2 stick Carrot.
- 2 Tomato.
- 4 Small Potatoes.
- 1/2 Capsicum Green
- Red & Yellow.
- 1/2 Broccoli
- 1/2 Onion.
- 3 clove Chopped Garlic.
- 1 Coarse Sea Salt.
- 1 tbsp Honey.
- 1 Dried Basil
- 1 Black Pepper.
- 1/2 Lime
- 2 tbsp Olive Oil
- Extra Virgin.
Instructions
- Marinate the chicken with honey, chopped garlic, black pepper & a pinch of coarse sea salt.
- Marinate for at least half hrs.
- Cut all the vegetables & mix with dried basil, olive oil & a pinch of coarse sea salt.
- Place all the chicken at the top of the vegetables.
- Pre heat the oven at 230C/446F.
- Wrap up the pan with aluminium foil & bake in the oven at 230C for 50min.
- After 50min, unwrapped the pan & bake again for another 20min at 230C until the chicken skin turn into brownish at the top.
- Squeeze some lime juice.
