Roasted Asparagus and Tomatoes with Feta

Ingredients

  • 1 pound Asparagus
  • 12- 1/2 ounces
  • weight Cherry Tomatoes
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Balsamic Vinegar
  • Salt And Pepper
  • 1 ounce
  • weight Feta Cheese

Instructions

  1. Preheat oven to 200 degrees C or 400 degrees F.
  2. Remove the woody, lower third of the asparagus stalks.
  3. Halve the cherry tomatoes.
  4. Place both vegetables on the baking tray.
  5. Add oil, vinegar, salt and pepper to taste.
  6. Mix well with your hands.
  7. Bake for about 15 minutes or until asparagus is done to your liking.
  8. I like it when it still has some bite.
  9. Crumble the feta over the vegetables in the tray and serve immediately.
