Ricotta Lemon Pasta

Ingredients

  • 1 Tablespoon Olive Oil
  • 1 clove Garlic
  • Minced
  • 1 whole Lemon
  • Juiced
  • 15 ounces
  • weight Ricotta Cheese (whole Milk)
  • 1/2 cups White Wine
  • 1 cup Chicken Broth
  • 1 teaspoon Cayenne Pepper
  • 1 pound Spaghetti
  • Cooked And Drained

Instructions

  1. Swirl the olive oil in a large saute pan over medium high heat.
  2. Add the garlic and saute until fragrant.
  3. Turn the heat down to medium and add the ricotta cheese and give it a good whisk.
  4. Add the rest of the ingredients (except the pasta), whisk until all combined and bring to a slow boil.
  5. Cover with a lid, but keep an eye on it.
  6. Simmer for about 5 minutes or so until thickened.
  7. If its too thin, whisk in a little spoonful of flour and cook a few minutes longer.
  8. Serve over pasta.
  9. Enjoy.
