Peeled And Diced (or 2 15-ounce Cans Cannellini Beans
Drained)
4 quarts Water Or Chicken Broth
Salt And Pepper
to taste
1 pound Kale
Washed
De-stemmed
And Torn Or Roughly Chopped
Instructions
In a heavy soup pot (I use a Dutch oven), saute onions and sausage together with olive oil until onions are translucent and sausage is almost cooked through.
Add potatoes (or beans) and water or chicken broth.
Bring to a boil.
When the potatoes are almost done, season broth with salt and pepper to taste, then add kale.
Cover and simmer for another 510 minutes, until kale is softened to your liking.
