Ingredients
- 1 onion
- diced
- 3 cloves garlic
- minced
- 1 rib celery
- diced
- 1 carrot
- diced
- 1 green pepper
- diced
- 1 cup brown rice
- 1 (15 ounce) can kidney beans
- 1 (14 ounce) can diced tomatoes
- 1 cup chicken broth
- 1 tablespoon chili powder
- 2 teaspoons thyme
- 2 teaspoons cumin
- salt and pepper
Instructions
- saute garlic and veggies until soft.
- add rice and spices, stir.
- add tomatoes and broth and bring to a boil.
- reduce and simmer until rice is almost done.
- add beans, salt and pepper.
- cook until done.
