Ray's' LOBSTER & SHRIMP CROSTINI'S WITH AVOCADO CILANTRO CREMA

Ingredients

  • 1 packages imitation lobster meat or fresh lobster If you have
  • 1 tbsp butter
  • 1 packages wheat or rye mini bread loaf
  • 1 tsp olive oil
  • 1 bunch fresh spinach
  • 1/2 tsp jardin fruit seasoning
  • 1 pinch garlic salt
  • 1 tsp minced garlic (jar)
  • 1 pinch red pepper flakes
  • 3/4 lb cooked shrimp
  • 1 bunch cilantro
  • 1 cup sour cream
  • 1 tsp jardin fruit seasoning
  • 1 tbsp mayonnaise
  • 1 avacado
  • 1 tsp salt
  • 1 pinch black pepper
  • 1 bunch green onions
  • 3/4 jalapeno
  • 1/2 lime
  • 1 pinch garlic salt

Instructions

  1. preheat oven to 375
  2. line a baking tray with foil and place your mini breads on there.
  3. You want a medium crunch crostini so youll need to keep an eye that they don't burn, they bake very fast.
  4. bake till crisp about 5 minutes or so
  5. wash your lobster and shrimp & pat all excess water.
  6. chop your lobster & shrimp into small bite size pieces.
  7. heat a small skillet with butter Olive oil & garlic add in your lobster and seasonings cook for about 3 minutes do not overcook.Lobsters already precooked.
  8. to make your crema cut your avocado dice jalapeno & green onions.
  9. I like to use the cuisinart for a really smooth consistency.
  10. But if you don't have one you can use a blender and or mix by hand.
  11. Add all ingredients & seasoning and blend well all ingredients together.
  12. Add to a bowl and a splash of lime juice.
  13. Now to assemble your crostini just smother some dressing on crostini top with lobster & shrimp mixture and top with a couple slices of washed and dried fresh spinach.ENJOY!
