Ranch Cucumber-Rice Salad
Ingredients
- 2 cups cooked brown rice
- cooled
- 1/2 cup KRAFT Light Cucumber Ranch Dressing
- 2 Tbsp. chopped fresh mint leaves or 1 tsp. dried mint leaves
- 2 medium cucumbers
- chopped (about 4 cups)
- 10 cherry tomatoes
- quartered
Instructions
- Toss rice with dressing and mint in medium bowl.
- Add cucumbers and tomatoes; stir gently.
- Cover.
- Refrigerate at least 2 hours or until chilled.
