Quinoa Zucchini Parmesan

Ingredients

  • 2 cups Water
  • 1 cup Quinoa
  • Uncooked
  • 1 Tablespoon Extra Virgin Olive Oil
  • 1 Bell Pepper
  • Stem And Seeds Removed
  • Chopped
  • 1 Medium Onion
  • Chopped
  • 4 Small Zucchini
  • Thinly Sliced In Rounds
  • 1- 1/2 cup Marinara Sauce
  • 3/4 cups Shredded Mozzarella Cheese
  • 3/4 cups Shredded Parmesan Cheese Plus More For Garnish
  • If Desired

Instructions

  1. Bring the water to a boil in a medium saucepan.
  2. Add the quinoa and return to a boil.
  3. Cover with a tight lid and turn the heat down to medium.
  4. Simmer about 12 minutes or until liquid is absorbed.
  5. Remove from heat and fluff with a fork.
  6. Replace the cover and let it stand for 15 minutes.
  7. In the meantime, pour the oil into a skillet on medium heat (use a skillet with a lid).
  8. Add peppers and onions into the skillet.
  9. Stir and cook for about 5 minutes.
  10. Add the zucchini and stir another 2-3 minutes.
  11. Pour in the marinara sauce and stir.
  12. Cover and let it cook for about 8 minutes or until vegetables are at desired tenderness, stirring occasionally.
  13. Sprinkle cheeses over top and cover the skillet until the mozzarella cheese has melted, about 1 minute.
  14. Fluff the quinoa one more time with a fork, then scoop it onto a platter.
  15. Cover the quinoa with the vegetable sauce .
  16. Sprinkle on a little more shredded Parmesan cheese if desired.
