Ingredients
- 1/4 cup Collard or Turnip greens
- rinsed and chopped
- 1 Tomato
- diced
- 1/3 Zucchini or Cucumber
- 3 tbsp Lemon or Lime juice
- 1/4 small purple or yellow onion
- diced
- 1/3 cup Quinoa
- cooked
- 1 Salt and pepper to taste
Instructions
- Cook collard greens and onions by simmering in shallow water for about 10 minutes
- Chop zucchini and halve the slices
- Combine all other ingredients and toss
- Sprinkle with salt and pepper as desired
