Quick and Easy Carrot and Cabbage Coleslaw Made in a Microwave

Ingredients

  • 1 Carrot
  • 1/2 Cabbage
  • 4 tbsp Mayonnaise
  • 1 tbsp plus ~ Water
  • 1 dash bit less than 1 tablespoon Venegar (optional)
  • 1 dash Salt and pepper
  • 1 dash Minced parsley (optional)

Instructions

  1. Mince the carrot and place in a heatproof dish.
  2. Mince the cabbage as well, and place in the Step 1 dish.
  3. Add the water, loosely cover with plastic wrap, and microwave for 4 minutes at 600 W!
  4. When they are cooled off, lightly drain the excess water.
  5. Add the mayonnaise and vinegar, and mix well.
  6. Adjust the flavour with salt and pepper.
  7. Sprinkle with parsley if you like, and done.
  8. I also like to season my coleslaw on the saltier side and add macaroni for my family.
  9. Mixing in corn or mixed vegetables is also delicious.
  10. If it's too much trouble to mince the vegetables, you can shred them or cut them with a slicer.
