Combine the broth and milk in a large microwave safe bowl and heat in the microwave until very hot.
In a separate bowl, toss together the corn starch and cheese (I cheated and bought the pre-shredded cheese then just put the corn starch in the bag and shook it together).
Gradually begin to add the cheese, a cup or so at a time.
Stir to combine after each addition.
After all of the cheese is combined, add the chorizo, poblanos, green onions and garlic.
Stir to combine.
Put in the crock pot on Warm setting and stir as needed.
