Pureed Cauliflower

Ingredients

  • 1 2-pound head cauliflower
  • 1 cup milk
  • Salt to taste
  • 2 tablespoons butter
  • 18 teaspoon freshly grated nutmeg
  • Freshly ground pepper to taste

Instructions

  1. Break cauliflower into florets.
  2. Add them to a kettle with cold water to cover.
  3. Add 1/4 cup milk.
  4. Add salt.
  5. Bring to a boil and simmer for 15 minutes, or until tender.
  6. Drain well.
  7. Put pieces, a few at a time, into the container of a food processor.
  8. Blend to a puree.
  9. Or put cauliflower through a food mill or ricer.
  10. Spoon puree into a saucepan.
  11. Heat remaining milk and add it to saucepan.
  12. Add butter, nutmeg and pepper.
  13. Blend well.
  14. Check for seasonings.
  15. Serve hot.
