Pumpkin and Sage Patties

Ingredients

  • 800 g pumpkin
  • 40 g amaretti
  • 1 teaspoon mustard
  • 130 g flour
  • 2 eggs
  • 50 g parmesan cheese
  • fresh sage
  • salt and pepper

Instructions

  1. Bake the pumpkin wrapped in foil for 50 minutes in a 250 degrees C oven, until softened.
  2. Puree the pumpkin, add the crushed amaretti biscuits, parmesan, mustard, flour and eggs.
  3. Season with salt and pepper.
  4. Butter a cupcake pan and spoon the mixture into the holes.
  5. Top each pattie with a leaf of sage, sprinkle a little more parmesan cheese
  6. Bake in a 250 degrees C ,pre-heated oven for 8 -10 minutes or until golden.
