Ingredients
- 800 g pumpkin
- 40 g amaretti
- 1 teaspoon mustard
- 130 g flour
- 2 eggs
- 50 g parmesan cheese
- fresh sage
- salt and pepper
Instructions
- Bake the pumpkin wrapped in foil for 50 minutes in a 250 degrees C oven, until softened.
- Puree the pumpkin, add the crushed amaretti biscuits, parmesan, mustard, flour and eggs.
- Season with salt and pepper.
- Butter a cupcake pan and spoon the mixture into the holes.
- Top each pattie with a leaf of sage, sprinkle a little more parmesan cheese
- Bake in a 250 degrees C ,pre-heated oven for 8 -10 minutes or until golden.
